Recipe makes about 9 cups
1 cup = 4 weight watchers points+
= 5 weight watchers smart points
1 1/2 cups dried great northern beans
6 cups chicken broth (I used Aldi Fit & Active)
5 carrots chopped
3 ribs of celery chopped
1 medium yellow onion diced
6 oz bacon chopped up(I used Oscar Meyer center cut original)
15 oz can diced tomatoes (not drained)
Salt & pepper to taste
Place your bacon in the freezer for 15 minutes. This makes it easier to chop up. Fry in a pan for several minutes. No need to get it crispy because it is gonna cook in soup for hours.
Combine all ingredients other than the salt & pepper in a large crock pot. If you add the salt at this point it will make the beans tough.
Cook on high for 6-8 hours.
Mash up some of the beans. I used my handy dandy Pampered Chef Mix & Chop. Add salt & pepper to taste.
