2Tbspmini chocolate chips
1 In a small bowl, combine water and espresso powder; chill for several minutes.
2 In another small bowl, combine ice cream, espresso mixture and chocolate chips. Spoon 2 tablespoons ice cream mixture on top of 12 wafers; top each with a second wafer. Freeze until ready to serve. Yields 1 sandwich per serving.
If you want to double this recipe, make one batch at a time so the ice cream won’t get too soft.
