  1. 1 lb extra-lean ground beef
  2. 1 cup onion, chopped
  3. 1 can (14 oz) diced tomatoes, drained
  4. 1 12 cup frozen corn
  5. 1 can (15 oz) black beans, drained and rinsed
  6. 1 tsp red pepper flakes
  7. 1 cup fat-free sour cream
  8. 12 cup low-fat cheddar cheese, shredded

  1. Brown ground beef and onions in a large skillet until thoroughly cooked. Mix in tomatoes, corn, back beans, and red pepper flakes. Simmer for 10 minutes, stirring occasionally. Mix in sour cream and simmer for another 10 minutes. Sprinkle with cheddar cheese before serving
