Skinny Chicken Nuggets

Ingredients

  • 3 chicken breasts fillets, skinless, cut into 1” cubes
  • 2 cups Panko bread crumbs, (whole wheat can be found at any whole foods type supermarket and most organic sections of your local grocery)
  • 1 large egg white, lightly whipped
  • 1 tablespoon Extra-Virgin Olive Oil or Canola Oil
  • 1 teaspoon black pepper
  • 1⁄8 teaspoon cayenne pepper
  • 1⁄4 teaspoon onion powder
  • Salt to taste

Directions

Oven should be preheated to 400°. Toss to coat egg white and chicken cubes in a large bowl. Along with Panko bread crumbs, add seasonings to chicken and coat well. If required, crumbs can be pressed onto chicken pieces. Use non-stick cookies sheet where chicken coated pieces are placed, drizzle with oil using an oil sprayer if it is available. Cook around 30 minutes until chicken is cooked through.
