2 Point Chicken Noodle Soup

This recipe I got at a Weight Watchers meeting.

Ingredients

  • 1 (2 ounce) chicken breasts ( cut in half if needed)
  • 1/4 cup thin spaghetti, broken up into 2 inch long pieces
  • 1 1/4 cups fat free chicken broth
  • 1/8 cup carrot, chopped
  • 1/8 cup celery, chopped
  • 1 dash salt
  • 1 dash pepper
  • cooking spray
  • 1 dash dried thyme
  • 1 dash dried parsley
  • 2 green onions, sliced thinly

Directions

  1. Cut chicken into bite size pieces.
  2. Sauté in a bit of cooking spray.
  3. Heat broth, pasta, herbs, carrots, celery, and salt and pepper together.
  4. Add chicken.
  5. Simmer until noodles are tender.
  6. Season to taste.
