20 mn Southwestern Beef Salad & Chile Lime Dressing

  • 1 lb lean roast beef thinly sliced and trimmed
  • ½ cup lightly packed fresh cilantro left, roughly chopped
  • 1 haas avocado, halved, pitted, peeled and chopped
  • 1-1/2 cups fresh corn kernels (from about 3 ears of corn)
  • 8 cups chopped romaine or mixed salad greens
  • 2 tbsps of lime juice
  • 1 tsp of chili powder
  • 1 tsp of ground cumin
  • ⅛ tsp of black pepper
  • 1 large tomato seeded and diced
  • ½ tsp of salt


Prep Time: 20 mins | Total Time: 20 mins

1. Whisk together in a large bowl the lime juice, cumin, chile powder, salt, and pepper. Add the corn kernels, tomato, avocado and cilantro. Mix well by tossing gently. Add more salt, pepper, chile powder, and lime juice according to your taste.
2. Put 2 cups of chopped romaine into each of 4 plates
3. Place the sliced roast beef evenly on top of the romaine on each plate. Top the preparation with the corn mixture.
