3 Points Omelet With Avocado


  • 1 large egg
  • 1 large egg white
  • 2 tbsps of pico de gallo, store bought or recipe found here
  • 1 oz. – 1/4 small Haas avocado, cut into slices
  • salt and pepper, to taste
  • cooking spray


Beat together in a small bowl the egg, egg white, salt and pepper.
While the medium nonstick skillet is heated over medium-low heat, spray with oil and pour the eggs. Cook about 2 to 3 minutes until they set and then transfer to a plate. Garnish with avocado and pico de gallo and serve.
