Finely chop onion, carrot and celery and combine with bread cubes in a medium bowl. Add in bouillon cubes dissolved in 1/4 cup of water.
Arrange chicken breast in the prepared pan and spoon the soup mixture over the chicken. Season with paprika and bake covered for 50 minutes until chicken is cooked through. When done, remove cover and bake for another 10 minutes. Serve immediately.
