Creamy Baked Spinach Artichoke Pasta


  • 12 oz pasta of your choice (I used Mezze Penne)
  • 1 package frozen spinach, thawed and drained
  • 1 cup artichokes, quartered
  • 4 oz. reduced fat cream cheese
  • 1 cup reduced fat milk (I used skim)
  • 1 1/4 cups reduced fat italian cheese blend, divided
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 2 tbsp. grated parmesan cheese


  • Cook pasta according to package instructions. Drain and set aside.
  • Preheat oven to 375F. Lightly spray a casserole dish with nonstick spray.
  • Heat a large saucepan over medium heat and combine milk and cream cheese. Whisk together until smooth and well combined. Sprinkle salt and garlic powder to taste.
  • Slowly stir in parmesan and half of the shredded Italian cheese. When the cheese has melted, add in the artichokes and spinach and cook until tender.
  • Place cooked pasta in the casserole dish and pour the cream cheese mixture over pasta. Finish by sprinkling the remaining cheese on top.
  • Bake for about 15-20 minutes or until heated through and cheese has melted and browned a bit on top.
  • Makes 8 servings
