Grilled Lamb Chops

  • 8 lamb loin chops, trimmed of fat (3.5 oz each bone-in)
  • 6 cloves garlic, crushed
  • 1 tsp extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tbsp fresh rosemary leaves
  • 1 1/4 teaspoon kosher salt
  • fresh ground pepper, to taste


  1. Rub salt and pepper generously to the lamb chops. In a small bowl, combine olive oil, lemon juice, garlic and rosemary. Add lamb chops to the marinade. Cover and  allow it to soak for at least an hour or overnight to let the marinade seep in.
  2. Heat grill over medium heat. Remove lamb chops from the marinade and grill for about 5 minutes flipping it over to brown all sides.
  3. When done, remove chops from grill, transfer to platter and serve.
