Baked Apple Squares Recipe

Ingredients

  • 1 cup whole wheat all-purpose flour
  • 1 cup whole wheat pastry flour
  • 1 cup old fashioned whole grain oats
  • 1/2 cup brown sugar
  • 6 tbsp unsalted butter, cold and cut into chunks
  • 1/2 cup diet cranberry apple juice (or just diet cranberry juice)
  • 5 apples peeled, cored, and cut into chunks
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp ground nutmeg

Instructions

  1. Preheat oven to 350 degrees, and spray a 9” x 13” baking pan with nonstick cooking spray.
  2. In a food processor, combine flour, oats, and ¼ cup of sugar; pulse until mixed well. Add in the butter and pulse until combined. Add in the apple cranberry juice and pulse until dough begins to pull away from the sides of the bowl.
  3. Scrape the dough into the pan, and press it out into an even layer. Bake in oven until dough is dry, but not browned; about 10-14 minutes.
  4. In a large bowl, toss the apples, nutmeg, cinnamon, vanilla, and remaining sugar. Evenly spread this mixture over the baked pastry in the pan.
  5. Bake until crust is brown and apples are tender; about 30-40 minutes. Cool and cut into 12 even squares.
