3 Points Peach Arugula Salad

Ingredients:

  • 4 cups baby arugula
  • 3 medium ripe peaches, pitted and sliced
  • 3/4 cup diced yellow bell pepper
  • 3 tbsp chopped walnuts
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tbsp fresh squeezed lemon juice
  • 1/8 tsp lemon zest
  • 1/8 tsp kosher salt
  • fresh black pepper, to taste

Directions:

  1. To prepare the dressing, combine olive oil, balsamic vinegar, lemon juice, lemon zest, salt and pepper in a large bowl. Whisk together until emulsified and well blended.
  2. Add in arugula, peaches, bell pepper and walnuts to dressing and toss until completely coated.
  3. Serve immediately topped with ricotta cheese if desired.
