Slow Cooker Tomato Spinach Soup

Ingredients

  1. 10 oz baby spinach, washed
  2. 2 medium carrots, chopped
  3. 2 medium stalks celery, chopped
  4. 1 large onion, chopped
  5. 1 clove garlic, minced
  6. 4 cup low sodium vegetable broth
  7. 1 can (28 oz) diced tomatoes
  8. 2 bay leaves
  9. 1 tbsp dried basil
  10. 1 tsp dried oregano
  11. 12tsp crushed red pepper flakes

  1. Add all the ingredients in a slow cooker.
  2. Cook covered on high for 5 hours or low for about 10 hours.
  3. Before serving, remove bay leaves and stir.
