Simple Roasted Butternut Squash

Ingredients Serves 4

  1. 1 butternut squash, peeled, seeded, and cut into 1 inch cubes
  2. 2 tbsp olive oil
  3. 2 clove garlic, minced
  4. 1 salt, to taste
  5. 1 ground black pepper, to taste

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss butternut squash with olive oil and garlic in a large bowl. Season with salt and black pepper. Arrange coated squash on a baking sheet.
  3. Roast until squash is tender and lightly browned, 25 to 30 minutes.
