Apple Oatmeal Muffins (Weight Watchers)

Ingredients Serves 12

  1. 2 cup apple, peeled and shredded (about 2 small apples)
  2. 1 12 cup all-purpose flour
  3. 1 cup quick cooking oats
  4. 23 cup brown sugar, firmly packed
  5. 1 12 tsp baking powder
  6. 12 tsp baking soda
  7. 12 tsp salt
  8. 12 tsp ground cinnamon
  9. 12 cup milk
  10. 2 tbsp vegetable oil

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Spray 12 muffin cups with nonstick cooking spray or line with paper liners.
  2. In a bowl, mix together flour, oats, brown sugar, baking powder, baking soda, salt, cinnamon, milk, and vegetable oil until combined. Evenly divide batter among the prepared muffin cups.
  3. Bake for 15-18 minutes or until a toothpick inserted in the center of a muffin comes out clean.
