Ingredients Serves 12
- 2 cup apple, peeled and shredded (about 2 small apples)
- 1 1⁄2 cup all-purpose flour
- 1 cup quick cooking oats
- 2⁄3 cup brown sugar, firmly packed
- 1 1⁄2 tsp baking powder
- 1⁄2 tsp baking soda
- 1⁄2 tsp salt
- 1⁄2 tsp ground cinnamon
- 1⁄2 cup milk
- 2 tbsp vegetable oil
Directions
- Preheat oven to 375 degrees F (190 degrees C). Spray 12 muffin cups with nonstick cooking spray or line with paper liners.
- In a bowl, mix together flour, oats, brown sugar, baking powder, baking soda, salt, cinnamon, milk, and vegetable oil until combined. Evenly divide batter among the prepared muffin cups.
- Bake for 15-18 minutes or until a toothpick inserted in the center of a muffin comes out clean.
