Ingredients
- 1 large egg
- 1 large egg white
- 2 tbsps of pico de gallo, store bought or recipe found here
- 1 oz. – 1/4 small Haas avocado, cut into slices
- salt and pepper, to taste
- cooking spray
Directions
Beat together in a small bowl the egg, egg white, salt and pepper.
While the medium nonstick skillet is heated over medium-low heat, spray with oil and pour the eggs. Cook about 2 to 3 minutes until they set and then transfer to a plate. Garnish with avocado and pico de gallo and serve.
