Quick & Healthy Breakfast Tacos

Ingredients

  • 2 tablespoons avocado
  • 1/4 cup canned black beans
  • 2 corn tortillas
  • 2 tablespoons salsa, choose chipotle if possible
  • 1 egg
  • 2 egg whites
  • 1/8 teaspoon cumin
  • 1/8 teaspoon oregano
  • Salt and pepper
  • 2 small slices of tomato (optional)*

Directions

Prep Time:  2 mins | Cook time:  3 mins | Total time:  5 mins

1 – Spray a microwave safe dish using cooking spray. Beat together the egg, egg whites, black beans, oregano, cumin, salt, and pepper. In case, you add other veggies, stir in with but if using raw veggies, consider microwaving them first for 1-2 minutes until tender.
2 – Microwave eggs for about 1 minute. Remove and scramble using a fork. Bring back to microwave for about 1.5 minutes until cooked through.
3 – Using the burner on the stove or microwave, warm the tortillas or toast a bit for 10-15 seconds.
4 – Combine the tacos with your favorite salsa, avocado, and other garnishes.
