Ingredients:
- 4 cups baby arugula
- 3 medium ripe peaches, pitted and sliced
- 3/4 cup diced yellow bell pepper
- 3 tbsp chopped walnuts
- 1 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1/2 tbsp fresh squeezed lemon juice
- 1/8 tsp lemon zest
- 1/8 tsp kosher salt
- fresh black pepper, to taste
Directions:
- To prepare the dressing, combine olive oil, balsamic vinegar, lemon juice, lemon zest, salt and pepper in a large bowl. Whisk together until emulsified and well blended.
- Add in arugula, peaches, bell pepper and walnuts to dressing and toss until completely coated.
- Serve immediately topped with ricotta cheese if desired.
