Ingredients

- 2 tablespoons of shredded low-fat Mexican-blend cheese
- 1 medium-large high-fiber flour tortilla with about 110 calories
- 1 tablespoon of frozen sweet corn kernels, thawed
- 1 tablespoon of frozen sweet corn kernels, thawed
- 1 tablespoon of canned black beans, rinsed and drained
- 1 tablespoon chopped scallions
- fat-free ranch dressing, additional BBQ sauce, salsa to top
Directions
Prep: 10 minutes | Cook: 5 minutes
1 – Mix in a small bowl cheese wedge, BBQ sauce until homogenous mixture. Put down tortilla flat and scatter BBQ-cheese mixture on one half. Garnish mixture with unused ingredients.
2 – Before turning heat to medium high, the grill or grill pan should be sprayed with nonstick spray. Set the half-loaded tortilla over the grill or grill pan, and let cook for 2 minutes.
3 – Use the spatula to fold the exposed portion of the tortilla over the filling and press delicately to seal. Turn over carefully while cooking until crispy, about 3 minutes. Serve sliced into wedges.
